Toasted spice, delicate red fruit and caramelised sugar twisted out of recognition. A concept drink that delivers, citrus bright and complex.

 

60ml/ 2 oz Belvedere Citrus
6 Fresh raspberries
Bar spoon of super fine sugar
Lime jelly
Candied ginger

Caramelize raspberries with sugar and flamed Angostura atomiser. Shake with cubed ice and double strain into a chilled martini glass. Garnish with lime jelly and candied ginger.
