Maple Peach Smash
Slow roasted maple dressed peaches yield a blush pink syrup and have a wonderful sweet tart bite This cocktail is torn between bright acidity and decadent honeyroasted tropical fruit. It walks that tightrope well.
60ml/ 2 oz Belvedere Orange
15ml/ ½ oz Lemon juice
½ Freshly maple roasted peach (or 25ml/ ¾ oz peach puree & dash maple syrup)
Dash crème de peche
Muddle peach with maple syrup. Add the rest of the ingredients, and shake with cubed ice. Double strain into a chilled martini glass, and garnish with a slice of peach.
