Orange Blossom Sour with Earl Grey Tea Foam


Like sipping satin through velvet, the bright notes of Belvedere orange punch through the soft floral folds of the Earl Grey foam. 


60ml/ 2 oz Belvedere Orange
30ml/ 1 oz Fresh lemon juice
15ml/ ½ oz Simple syrup
Earl Grey foam garnish

Prepare 500g of Earl Grey tea using the normal method. Soak 2 sheets 200 bloom gelatin, and decant into a crème whipper or espuma.Charge with 1 nitrous oxide canister and chill overnight. (12 hours) Shake canister vigorously before use.
