Pineapple and Fennel Martini

 

Like a cool Mediterranean breeze on a hot summers day, the gentle anise of the fennel seeds lifts Belvedere citrus and freshens the strident tropical sun of the pineapple. 

 

60ml/ 2 oz Belvedere Citrus
4 or 5 Chunks fresh pineapple
6 Fennel seeds
Dash simple syrup
Dash lemon juice

Muddle pineapple with fennel syrup. Shake with cubed ice, and strain into a chilled martini glass. Garnish with 3 fennel seeds.
