Thyme Gimlet

60ml/ 2oz Belvedere Citrus
30ml/ 1oz Thyme syrup
15ml/ 1⁄2oz Lemon juice
Dash cardamom bitters

Shake with cubed ice and strain over ice into a rocks glass. Garnish with a lemon slice and a thyme sprig.

*Thyme Syrup -

480ml/ 16oz Water
480ml/ 16oz White sugar
7-8 Sprigs of fresh thyme

Simmer thyme in the water for approximately 10-15 minutes or until you see the thyme go brown. Remove thyme and add sugar. Stir until dissolved. Cool and funnel into a glass bottle. Keep refrigerated.
