1.25 oz / 35 ml Belvedere Vodka
0.75 oz / 20 ml Pineapple Tea Infused Sauternes
1 Dash Absinthe
Top Soda Water
Stir, add more ice, a lemon horses neck, then crown with chilled soda. Garnish with a mint sprig and a slice of fresh banana.
*For pineapple tea infused sauternes - infuse 200 g cubed pineapple in 500 ml Sauternes in the fridge for 2 hours. Then add 5 g loose leaf black tea and infuse for a further five minutes. Strain through muslin, and store.
