1 oz / 40 ml Belvedere Pure
0.5 oz / 20 ml Rosemary Lime Cordial*
0.25 oz / 10 ml Lime Juice
0.5 oz / 20 ml Strawberry Puree
Muddle the lime quarters in a rocks glass, add crushed ice and the remaining ingredients and churn. Top with more crushed ice and garnish with slices of strawberry and a sprig of rosemary.
*For rosemary lime cordial – heat 500 ml lime juice and 900 g caster sugar with 100 g fresh rosemary in a saucepan. Bring to a simmer, remove from the heat leave and to infuse for two hours. Strain and store.
