Surf Paradise

1.5 oz / 50 ml Belvedere Vodka

0.5 oz / 15 ml Lemon Juice

0.25 oz / 10 ml Soy Sauce

4 oz / 120 ml Basque Country Mix*

Build all ingredients in a mug over cubed ice and stir to combine. Garnish with green chili.

*For Basque country mix – in a large saucepan combine 900 g red tomatoes, 300 g red capsicum - 7 g piment d’espelette, 5 chilies, 5g caster sugar, 450 ml water, 5 cloves,6 g coriander seeds, 15 g black pepper, and 15 g salt. Simmer on low heat for one hour, blend, strain, and store in the fridge.
